Venison Stroganoff (from another site)
Ingredients: 1-1/2 lbs venison steak, 1/4 cup butter, 1 cup fresh mushrooms, sliced, 1 tbsp flour, 1/2 cup sour cream, 1 tsp salt, 1/2 tsp pepper.
Directions: Cut steaks into 1" strips, 1/4" thick. Melt half the butter in a large covered skillet. Add the venison and brown lightly on all sides over medium heat. Cover and stir occasionally. Add the mushrooms after 15 minutes and continue cooking over low heat for 10 minutes. Set the meat and mushrooms aside on a warm platter. Melt the remaining butter in the same skillet over low heat, stir in the flour and stir until smooth. Add the sour cream and simmer until warm. Return the meat and mushrooms to the skillet, season with the salt and pepper, and stir until meat is cover in sauce. Heat thoroughly on low heat for 5 minutes--do not allow to boil. Serve over egg noodles.
